Ingredients

  • 1/2 cup melted butter
  • 1 1/2 cups brown sugar
  • 24 maraschino cherries
  • 1 (20 oz) can crushed pineapple
  • 1 package pineapple cake mix
  • 3 eggs
  • 1 1/3 cups pineapple juice
  • 1/3 cup vegetable oil
  • 1 tbsp confectioners’ sugar (optional)

Instructions

  1. Preheat the oven to 350°F and spray the cupcake tins with cooking spray.
  2. Add melted butter and brown sugar to each tin, and top with pineapple and cherries.
  3. Mix cake ingredients, and pour over the pineapple mix.
  4. Bake for 25 minutes; let cool for a few minutes.
  5. Invert onto a tray and dust with powdered sugar.
