Right now I am pretty addicted to Instant Pot Sweet Potatoes. I have always been a sweet potato fan, but how easy it is to make sweet potatoes in the instant pot is just insane.
Most days, I do not even peel my sweet potatoes before throwing them into the Instant Pot. Simply wash them, drop them in, add in a 1/2 cup of water and let it cook for 5-8 minutes per sweet potato (the larger the sweet potato the more time it may need).
Once the sweet potatoes are done cooking they are so tender the skin falls right off of them. So if you are lazy like me and hate peeling potatoes that’s always an option…ha.
You can even throw your sweet potatoes into a steamer basket that you set on top of your meat. We did that the other night on top of a pork loin with red onions and honeycrisp apples…oh my word it was delicious.
Instant Pot Mashed Sweet Potatoes Recipe
Cooking sweet potatoes in your pressure cooker definitely is an Instant Pot recipe for beginners. It’s pretty difficult to mess it up.
For my kids, mashed sweet potatoes with nutmeg and maple syrup is what they love (you can find that recipe below).
Most days they will eat their sweet potatoes just like that. To make those sweet potatoes a super special treat some days we will swap the butter for cinnamon honey butter – YUM.
Alrighty y’all, let’s get cooking!
- 2 lbs sweet potatoes, cubed
- 1 cup water
- 3 T. butter
- 2 T. maple syrup
- 1/4 tsp. nutmeg
- salt, optional
- Wash, peel, and cut the sweet potatoes.
- Add water to the Instant Pot and place in a steamer basket. Add sweet potatoes into the steamer basket.
- Cover Instant Pot, lock lid, and seal vent.
- Cook on "Manual/High" for 8 minutes. Once done cooking use quick release.
- Mash the sweet potatoes and then add in butter, maple syrup, nutmeg, and salt.
- Serve and enjoy!
