4 boneless skinless chicken breasts
1 box (6 oz) stuffing mix
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
1/2 cup sour cream
Salt and pepper to taste
Instructions
Place the four boneless skinless chicken breasts in the bottom of your crockpot in a single layer. Season them lightly with salt and pepper on top.
In a separate bowl, whisk together the cream of chicken soup, sour cream, and chicken broth until smooth and well combined with no lumps remaining. The mixture should look creamy, pale, and pourable.
Pour the cream sauce mixture evenly over the chicken breasts, making sure the liquid covers and surrounds the chicken as fully as possible. Then sprinkle the dry stuffing mix evenly over the top of everything. Do not stir or press it down.
Cover the crockpot and cook on LOW for 7 to 8 hours or on HIGH for 4 to 5 hours.
Once the cook time is up, use two forks to shred the chicken slightly right in the pot, breaking it up just enough to mingle with the sauce. Then use a fork to gently fluff the stuffing layer on top. Serve straight from the crockpot while still steaming.
