One of my favorite Instant Pot soups is vegetable beef soup. It’s hearty, filling and I can make it with what’s in my fridge. This recipe does not disappoint!
Last year at this time of year I had my garden fully planted with teeny tiny plants peeking out of the dirt smiling at the sun. I was so productive and so proud of my little plants!
Well let’s just say that today, I’m impressed with myself to be out of my PJs, much less cooking dinner – even if it’s all from ingredients I had on hand (and did not grow LOL). But here we are! Woo hoo!
Instant Pot Beef Vegetable Soup Recipe
Y’all this soup is ridiculously easy. It’s one of those recipes that you really can’t mess up.
And it’s one of those recipes that you can throw just about anything into and it will still be delicious.
Unless you do something insane like chocolate. Don’t do that. (But if you do, lemme know how it goes – and send pics!)
Every single time we make this recipe we switch it up and add in some new stuff.
When writing this recipe I left it at the basics just to give y’all the idea, but feel free to use whatever you have on hand.
Like tonight we used everything listed plus zucchini and tomatoes…and it was absolutely delicious.

The stew setting is best for cooking meat on high pressure. This button can be used for cooking meat in some broth, or in meat stews.
Cook stew meat for 15 minutes if meat is defrosted, 25 minutes for frozen beef.
The beef won’t be an issue if it’s overcooked, but the vegetables will become mush if you cook them for too long.
To make beef stew full of flavor, use beef bouillon paste. You can also add herbs and spices.
I love both ways. The beef in the slow cooker tends to be slightly better as far as the flavor that gets cooked in. But if you’re looking for a way to cook beef stew fast, the Instant Pot wins every time!
Beef stew leftovers are BOMB! As long as it’s properly stored, cooked beef stew will last for 3 to 4 days in the refrigerator.
Items Recommended for Instant Pot Vegetable Beef Soup
Alrighty y’all, let’s get cooking!
- 2 lbs stewing beef
- 1 bag of baby carrots or 2 large carrots cut into chunks
- ¼ lb. cut green beans or 1 can green beans
- 1 medium onion quartered
- 2 large potatoes cut into large chunks
- 1 large stalk of celery sliced
- 2 cups water
- Place all ingredients in Instant Pot.
- Cover, lock lid, and seal vent.
- Set to stew. 15 minutes if meat is defrosted, 25 minutes for frozen beef.
- Once done cooking allow the Instant Pot to naturally release for 10 minutes and then quick release the remaining pressure.
- Serve and enjoy!
