PINEAPPLE UPSIDE-DOWN BREAD

You’ll Need:

• 1 1/2 cups flour
• 3/4 cup sugar
• 2 eggs
• 1/2 cup butter, melted
• 1 tsp vanilla extract
• 1 can pineapple rings
• Maraschino cherries
• 1/2 cup brown sugar

Instructions:

1️⃣ Preheat oven to 350°F

2️⃣ Grease loaf pan well

3️⃣ Sprinkle brown sugar into bottom of pan

4️⃣ Arrange pineapple rings and cherries

5️⃣ Mix butter, sugar, eggs, and vanilla

6️⃣ Stir in flour until combined

7️⃣ Pour batter gently over pineapple layer

8️⃣ Bake 45–55 minutes until golden

9️⃣ Cool 10 minutes then carefully flip onto plate

Tip: Spoon extra caramel from the pan back over the top before serving

You’ll Need:

• 12 oz spaghetti
• 3 cups cooked chicken, shredded
• 1 can cream of mushroom soup
• 1 can Rotel tomatoes
• 2 cups shredded cheddar cheese
• 1 cup chicken broth
• 1 small onion, diced
• 2 garlic cloves, minced
• Salt and pepper

Instructions:

1️⃣ Preheat oven to 350°F

2️⃣ Cook spaghetti until just al dente

3️⃣ Sauté onion and garlic until soft

4️⃣ Stir in soup, Rotel, broth, salt, and pepper

5️⃣ Add shredded chicken and cooked spaghetti

9️⃣ Bake 25–30 minutes until bubbly and golden

BEEF & CHEESE ENCHILADAS

You’ll Need:

• 1 lb ground beef
• 8 corn tortillas
• 2 cups enchilada sauce
• 1 cup cheddar cheese, shredded
• 1 cup Monterey Jack cheese, shredded
• 1 small onion, diced
• 1 packet taco seasoning
• Sour cream for topping

Instructions:

1️⃣ Preheat oven to 375°F

2️⃣ Cook ground beef and onion until browned

3️⃣ Stir in taco seasoning and a little enchilada sauce

4️⃣ Warm tortillas slightly so they roll easily

5️⃣ Fill tortillas with beef and cheese

6️⃣ Roll tightly and place in baking dish

7️⃣ Pour enchilada sauce over top

8️⃣ Add remaining cheese

9️⃣ Bake 20–25 minutes until bubbly

Tip: Top with sour cream and green onions right before serving
