- 2 cups all-purpose flour
- 1 can (20 oz) crushed pineapple, drained (reserve 2 tbsp juice)
- 1/2 cup sour cream
- 1 cup sugar
- 3 oz. cream cheese, softened
- 1 tsp baking soda
- 1 tsp salt
- 3 tsp vanilla extract
- 1 egg, beaten
For the Glaze:
- 1 1/3 cups powdered sugar
- 2 tbsp pineapple juice
Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- Cream sugar and cream cheese together. Add egg, vanilla, and sour cream.
- In a separate bowl, whisk flour, baking soda, and salt. Combine with the wet mixture.
- Fold in pineapple and mix well. Pour the batter into the loaf pan.
- Bake for 60 minutes. Let it cool.
- Mix glaze ingredients and drizzle over the cooled bread.
