Ingredients

  • 2 cups all-purpose flour
  • 1 can (20 oz) crushed pineapple, drained (reserve 2 tbsp juice)
  • 1/2 cup sour cream
  • 1 cup sugar
  • 3 oz. cream cheese, softened
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 tsp vanilla extract
  • 1 egg, beaten

For the Glaze:

  • 1 1/3 cups powdered sugar
  • 2 tbsp pineapple juice

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Cream sugar and cream cheese together. Add egg, vanilla, and sour cream.
  3. In a separate bowl, whisk flour, baking soda, and salt. Combine with the wet mixture.
  4. Fold in pineapple and mix well. Pour the batter into the loaf pan.
  5. Bake for 60 minutes. Let it cool.
  6. Mix glaze ingredients and drizzle over the cooled bread.
