- 1 box refrigerated pie crust (softened)
- 2 ½ cups light corn syrup
- 2 ½ cups packed brown sugar
- ½ cup melted butter
- 4 ½ tsp vanilla extract
- 6 slightly beaten eggs
- 2 cups coarsely chopped pecans
- Butter-flavor cooking spray
- 2 cups pecan halves
- Vanilla ice cream (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish and line it with pie crust.
- In a bowl, mix corn syrup, brown sugar, melted butter, vanilla, and eggs until smooth.
- Stir in chopped pecans and pour mixture over the pie crust.
- Top with pecan halves and bake for 60 minutes until set and golden.
- Cool slightly before serving. Add vanilla ice cream if desired.
