  • 1 (15 oz) can fire-roasted diced tomatoes
  • 2 tbsp tomato paste
  • 2 ½ cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp sugar
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • 2 tbsp cornstarch + 3 tbsp water (for slurry)

Instructions

  1. Prepare the Steak: In a shallow bowl, mix flour, onion powder, smoked paprika, salt, and pepper. Dredge the cubed steak in the flour mixture, shaking off excess.
  2. Sear the Meat: Heat oil in a large skillet or Dutch oven over medium-high heat. Brown the steak on both sides for about 2 minutes per side. Remove and set aside.
  3. Build the Flavor: In the same pan, sauté onions and bell peppers until softened, about 3 minutes. Stir in garlic and tomato paste, cooking for another minute until fragrant.
  4. Simmer: Pour in diced tomatoes, beef broth, Worcestershire sauce, sugar, oregano, and thyme. Stir well, then return the steak to the pan, covering it with the sauce.
  5. Slow Cook to Perfection: Reduce heat to low, cover, and let it simmer for 1 ½ hours, stirring occasionally until the meat is fork-tender.
