Ingredients
• 1 1/2 cups + 1 tbsp all-purpose flour
• 2 tsp baking powder
• 1/2 tsp salt
• 3 large eggs
• 1 cup sugar
• 1 cup yogurt or sour cream
• 1/2 tsp vanilla
• 1/2 cup vegetable oil
• 2 tsp lemon zest
• 1 1/2 cups blueberries (fresh or frozen)
Lemon Glaze
• 2-3 tbsp lemon juice
• 1 cup powdered sugar
Notes
1️⃣ Heat oven to 350°F; line 9×5 loaf pan.
2️⃣ Whisk flour, baking powder, salt.
3️⃣ Beat eggs + sugar; add yogurt, vanilla, oil, lemon zest.
4️⃣ Fold in dry mix gently.
5️⃣ Coat blueberries with 1 tbsp flour; fold in.
6️⃣ Pour into pan; bake 50–55 mins.
7️⃣ Mix lemon juice + sugar; drizzle on warm loaf.
